Crust Preparation

    Make the crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and ground cinnamon. Stir in melted butter until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until set. Let cool.

Filling Preparation

    Prepare the filling

    In a mixing bowl, beat the softened cream cheese until smooth. Gradually mix in the sweetened condensed milk until well combined. Add the mango puree, lemon juice, and vanilla extract; mix until smooth. Pour the filling into the cooled crust and smooth the top. Refrigerate for at least 4 hours or until set.

Fruit Salad Preparation

    Make the fruit salad

    In a bowl, combine diced mango, sliced strawberries, blueberries, and chopped mint leaves. Drizzle with honey and gently toss to coat. Chill until ready to serve.

Currant Coulis Preparation

    Prepare the coulis

    In a saucepan, combine currants, water, and sugar. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the currants are soft and the mixture thickens. Stir in lemon juice. Allow to cool before serving.

Assemble and Serve

    Slice the chilled mango ice box pie and plate it. Top with a scoop of fruit salad and drizzle with currant coulis before serving.
