Preparing the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick) to ensure they cook evenly.

Soaking the Cut Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.
Frying

Heating the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Frying the Potatoes
Remove the fries from the water and pat them dry with a clean towel. Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown.

Draining and Seasoning
Using a slotted spoon, remove the fries and place them on paper towels to drain excess oil. While they are still hot, sprinkle with salt and black pepper to taste.
