Prepare the Onions
Slice the yellow onions into thin half-moons. This will help them caramelize evenly.

Add Garlic
Mince the garlic cloves and add them to the caramelized onions. Cook for an additional 1-2 minutes until fragrant.

Deglaze the Pot
Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for about 5 minutes until reduced by half.

Add Broth and Seasonings
Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 30-40 minutes.

Prepare the Baguette
While the soup is simmering, slice the French baguette into 1-inch thick slices.

Toast the Baguette
Toast the baguette slices in a toaster or under a broiler until they are golden brown on both sides.

Add Cheese to Soup
Once the soup is ready, remove the bay leaf. Ladle the soup into oven-safe bowls, top each bowl with a toasted baguette slice, and then sprinkle with gruyère and parmesan cheese.

Place the bowls under the broiler for about 3-5 minutes, or until the cheese is melted and bubbly.
