Preparation of Fries

Prepare Potatoes
Peel the russet potatoes and cut them into thick fries.

Soak Potatoes
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Preparation of Tartar Sauce

Mix Ingredients
In a medium bowl, combine mayonnaise, chopped dill pickles, lemon juice, capers, and fresh dill. Stir well until all ingredients are mixed thoroughly.

Chill
Refrigerate the tartar sauce until ready to serve.
Preparation of Fish

Make Batter
In a large bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until the batter is smooth and thick.

Heat Oil
In a deep fryer or a large pot, heat oil to 350°F (175°C).

Batter and Fry Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve the battered fish alongside the crispy fries and a generous dollop of tartar sauce.
