Method

Preparation of Fries

  1. 1

    Prepare Potatoes

Peel the russet potatoes and cut them into thick fries.

  2. 2

    Soak Potatoes

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

  3. 3

    Dry and Fry

Drain the fries and pat them dry with a towel. Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches for about 5-7 minutes until golden brown. Remove and drain on paper towels, then sprinkle with salt.

Preparation of Tartar Sauce

  1. 4

    Mix Ingredients

In a medium bowl, combine mayonnaise, chopped dill pickles, lemon juice, capers, and fresh dill. Stir well until all ingredients are mixed thoroughly.

  2. 5

    Chill

Refrigerate the tartar sauce until ready to serve.

Preparation of Fish

  1. 6

    Make Batter

In a large bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold sparkling water until the batter is smooth and thick.

  2. 7

    Heat Oil

In a deep fryer or a large pot, heat oil to 350°F (175°C).

  3. 8

    Batter and Fry Fish

Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serving

  1. 9

    Plate the Dish

Serve the battered fish alongside the crispy fries and a generous dollop of tartar sauce.
