Preparing the Onion Rings

Slice the Onions
Peel and slice the large onions into 1/4-inch thick rings. Separate the rings and set aside.

Prepare the Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk until well combined. Gradually add cold sparkling water to the dry ingredients, whisking until you achieve a smooth batter.

Heat the Oil
In a large deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 365°F (185°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess batter to drip off. Carefully place the coated rings into the hot oil.

Combine the Ingredients
In a medium bowl, mix together the mayonnaise, sour cream, buttermilk, garlic powder, dried dill, salt, and black pepper. Stir until the mixture is smooth and well combined.

Fold in the chopped fresh chives into the ranch dressing for added flavor.
