Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the unsweetened chocolate and unsalted butter together until smooth. Stir frequently and remove from heat once melted.

  3. 3

    Mix in Sugar and Eggs

Stir in the granulated sugar until well combined. Allow the mixture to cool slightly before adding the eggs and egg yolks. Whisk until fully incorporated.

  4. 4

    Add Vanilla and Dry Ingredients

Mix in the vanilla extract. Then gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

  5. 5

    Prepare Ramekins

Grease four ramekins with butter and dust with flour to prevent sticking. Shake out any excess flour.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  8. 8

    Cool Slightly

Remove the cakes from the oven and let them cool for 1-2 minutes.

  9. 9

    Invert and Serve

Carefully run a knife around the edges of each ramekin, then invert onto a plate. Serve immediately with a scoop of vanilla ice cream and dust with powdered sugar if desired.
