Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (160°C).

  2. 2

    Combine Crust Ingredients

In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined.

  3. 3

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.

Filling Preparation

  1. 5

    Beat Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

  2. 6

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream, mixing until fully combined.

  3. 7

    Incorporate Vanilla and Eggs

Add the vanilla extract and eggs one at a time, mixing on low speed until just combined. Do not overmix.

  4. 8

    Pour Filling into Crust

Pour the cream cheese filling over the cooled crust in the springform pan.

  5. 9

    Bake the Cheesecake

Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly.

  6. 10

    Cool the Cheesecake

Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Then remove from the oven and let it cool to room temperature.

  7. 11

    Chill the Cheesecake

Refrigerate the cheesecake for at least 4 hours, or overnight for best results.

Topping Preparation

  1. 12

    Prepare the Berries

In a bowl, mix the fresh mixed berries with powdered sugar, allowing them to macerate for about 15 minutes.

  2. 13

    Top the Cheesecake

Once the cheesecake is chilled, top it with the macerated berries just before serving.
