Crust Preparation

Make the Dough
In a large mixing bowl, combine all-purpose flour, granulated sugar, and salt. Mix well. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Form the Dough
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Split the dough into two halves, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apples
In a large bowl, toss the sliced apples with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, lemon juice, and flour. Set aside to allow the flavors to meld.

Roll Out the Dough
Preheat the oven to 425°F (220°C). Take one dough disk out of the refrigerator, roll it out on a floured surface to fit a 9-inch pie pan. Place the rolled-out dough into the pan.

Add the Filling
Pour the apple filling into the crust, spreading it evenly.

Cover the Pie
Roll out the second dough disk and place it over the filling. Seal the edges by crimping them with your fingers or a fork. Cut slits in the top crust to allow steam to escape.

In a small bowl, mix melted butter, granulated sugar, and ground cinnamon. Brush this mixture over the top crust.

Bake the Pie
Bake in the preheated oven for 45-50 minutes or until the apples are tender and the crust is golden brown. If the edges brown too quickly, cover them with foil.

Allow the pie to cool for at least 10 minutes before slicing. Serve warm with scoops of vanilla ice cream on the side.
