Method
Preparation
- 1
Prepare the Marinade
In a small pan, dry roast the Szechuan peppercorns over medium heat for about 2-3 minutes until fragrant. Remove from heat and crush them lightly using a mortar and pestle or spice grinder.
- 2
Mix Marinade Ingredients
In a large mixing bowl, combine the crushed Szechuan peppercorns, soy sauce, rice vinegar, honey, minced garlic, grated ginger, red chili flakes, sesame oil, salt, and black pepper. Whisk until well combined.
- 3
Marinate the Chicken
Add the chicken wings to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Cooking
- 4
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 5
Prepare a Baking Sheet
Line a baking sheet with aluminum foil and place a wire rack on top of it. This will help to achieve crispy wings.
- 6
Arrange Chicken Wings
Remove the chicken wings from the marinade, allowing excess marinade to drip off. Arrange the wings in a single layer on the wire rack.
- 7
Bake the Wings
Bake the wings in the preheated oven for 40-45 minutes, turning them halfway through, until they are golden brown and crispy.
- 8
Garnish and Serve
Once done, remove the wings from the oven. Garnish with chopped green onions and sesame seeds before serving.
