Method

Preparation

  1. 1

    Preheat Oven

Preheat the oven to 200°C (392°F) and prepare four ramekins by greasing them with butter and dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth and well combined. Remove from heat and let it cool slightly.

  3. 3

    Whisk Eggs and Sugar

In a separate bowl, whisk together the granulated sugar and large eggs until pale and fluffy, about 3-4 minutes using an electric mixer.

  4. 4

    Combine Mixtures

Slowly add the melted chocolate and butter mixture to the egg and sugar mixture, stirring gently to combine.

  5. 5

    Add Flour and Flavoring

Sift the all-purpose flour and salt into the mixture, then add the vanilla extract. Fold gently until just combined, being careful not to overmix.

  6. 6

    Pour into Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

  1. 7

    Bake the Fondants

Place the ramekins in the preheated oven and bake for 10-12 minutes, or until the edges are set but the center remains soft and gooey.

  2. 8

    Cool Slightly

Once baked, remove the ramekins from the oven and let them cool for about 1-2 minutes before serving. This allows the fondants to set slightly.

Serving

  1. 9

    Serve with Toppings

Carefully invert each fondant onto a plate. Dust with powdered sugar, and serve warm with a scoop of vanilla ice cream and fresh berries on the side.
