    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

    Season the Steak

    Generously season both sides of the ribeye steaks with salt and black pepper.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Steak

    Add the ribeye steaks to the pan and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

    Add Aromatics

    During the last minute of cooking, add the butter and fresh rosemary to the pan. Spoon the melted butter over the steaks for added flavor.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate for about 5 minutes before slicing.

    Prepare the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Rinse them under cold water.

    Boil the Potatoes

    In a large pot, add the chopped potatoes and enough water to cover them. Bring to a boil and add a pinch of salt. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Cook the Garlic

    In the last 5 minutes of boiling, add the garlic cloves to the pot with the potatoes.

    Drain and Mash

    Once cooked, drain the potatoes and garlic. Return them to the pot and mash them together until smooth.

    Add Milk and Butter

    Stir in the milk and butter until well combined. Season with salt and pepper to taste.
