Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt.

    Cook Pasta

    Add 8 cups of pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of the pasta water.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, wash and chop the zucchini, bell pepper, cherry tomatoes, carrot, and broccoli into bite-sized pieces.

    Sauté Vegetables

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

    Add Vegetables

    Add the chopped vegetables to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they are tender but still vibrant.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine.

    Add Seasoning

    Pour in the reserved pasta water gradually if needed, until reaching desired consistency. Season with black pepper, and top with grated Parmesan cheese and chopped basil.

    Serve

    Toss everything together until well combined. Serve immediately, garnished with additional Parmesan and basil if desired.
