In a large saucepan, melt 4 tablespoons of unsalted butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly.

Gradually add the milk to the roux, whisking continuously to avoid lumps. Cook for about 5-7 minutes until the mixture has thickened.

Remove the saucepan from heat and stir in the shredded cheddar and Monterey Jack cheese until fully melted and smooth.

In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Stir until the pasta is well-coated.
