Pasta Preparation

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    In a large saucepan, melt 4 tablespoons of unsalted butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes, stirring constantly.

    Gradually add the milk to the roux, whisking continuously to avoid lumps. Cook for about 5-7 minutes until the mixture has thickened.

    Remove the saucepan from heat and stir in the shredded cheddar and Monterey Jack cheese until fully melted and smooth.
