Method

Beef Wellington

    Prepare the Beef

    Season the beef tenderloin with salt and black pepper. Sear in a hot skillet until browned on all sides, about 3-4 minutes. Remove from heat and brush with Dijon mustard. Let cool.

    Sauté the Mushrooms

    In the same skillet, add chopped mushrooms and cook until most of the moisture evaporates, about 8-10 minutes. Let cool.

    Assemble the Wellington

    Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping. Spread the cooled mushroom mixture over the prosciutto. Place the beef on top and roll tightly into a log. Chill for 30 minutes.

    Wrap in Puff Pastry

    Preheat oven to 400°F (200°C). Roll out puff pastry and wrap it around the beef, sealing the edges. Brush with beaten egg. Score the top lightly with a knife.

    Bake

    Bake for 25-30 minutes or until the pastry is golden brown and the beef reaches desired doneness. Let rest for 10 minutes before slicing.

Garlic Mashed Potatoes

    Boil the Potatoes

    In a large pot, add quartered potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to pot.

    Add Garlic and Mash

    Add minced garlic, butter, salt, and heavy cream to the pot. Mash the potatoes until smooth and creamy. Adjust seasoning with additional salt and pepper if needed.

Brussels Sprouts and Asparagus

    Prepare the Vegetables

    Preheat oven to 425°F (220°C). Toss halved Brussels sprouts and trimmed asparagus with olive oil, salt, and pepper.

    Roast

    Spread vegetables on a baking sheet in a single layer. Roast for 20-25 minutes or until tender and slightly caramelized.

Demi Gravy

    Make the Gravy

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in beef stock and red wine. Simmer until thickened, about 10 minutes. Season with salt and pepper to taste.

Buttered Snow Crab Claws

    Prepare Crab Claws

    In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Cook the Crab

    Add snow crab claws to the skillet and drizzle with lemon juice. Cook for 5-7 minutes until heated through. Garnish with chopped parsley and season with salt and pepper.
