Method

Grilling the Salad

    Prepare the Lettuce

    Preheat your grill to medium heat. Cut the Waimanalo whole leaf romaine lettuce in half lengthwise. Drizzle the cut sides with olive oil and sprinkle with salt and black pepper.

    Grill the Lettuce

    Place the lettuce halves cut-side down on the grill. Grill for about 3-4 minutes until you see grill marks and the lettuce is slightly wilted. Remove from the grill and let cool slightly.

    Grill the Anchovies

    On a piece of aluminum foil, place the anchovy fillets and drizzle with a little olive oil. Fold the foil into a packet and place it on the grill for about 2-3 minutes until heated through. Remove from the grill and set aside.

Making the Dressing

    Combine Ingredients

    In a small bowl, whisk together the minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, and mayonnaise until smooth and well combined.

Assembling the Salad

    Combine the Salad

    In a large serving bowl, place the grilled romaine lettuce halves. Top with the grilled anchovies, pepperoncini peppers, and drizzle the Caesar dressing over the top.

    Finish with Cheese

    Sprinkle the grated Parmesan cheese over the salad. Serve immediately while the lettuce is still warm.
