Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it’s just about to simmer, then remove from heat.

Whisk the Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.

Cook the Base
Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

Cover and refrigerate the mixture for at least 4 hours or overnight.

Prepare Flavor Variations
Depending on your chosen flavor, prepare the ingredients. For strawberry gelato, blend fresh strawberries into a puree. For chocolate gelato, mix in cocoa powder. For pistachio, fold in chopped pistachios. For coffee gelato, stir in the brewed coffee.

Once the base is chilled, stir in your chosen flavor until fully incorporated.

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.

Transfer the gelato to a lidded container and freeze for at least 4 hours to firm up before serving.
