Prepare the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water and pat dry with paper towels. Cut the calamari into rings, about 1/2 inch thick.

Prepare the Breading
In a large mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Bread the Calamari
Dip each calamari ring into the egg mixture, allowing excess to drip off. Then, dredge the ring in the flour mixture, coating evenly. Place the breaded calamari on a plate.
Fry the Calamari

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in small batches, ensuring not to overcrowd the pot. Fry for about 2-3 minutes, or until golden brown and crispy.

Drain and Serve
Remove the fried calamari using a slotted spoon and transfer to a plate lined with paper towels to drain excess oil. Season with a pinch of salt while hot.

Combine Ingredients
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir well to combine.

Simmer the Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add chopped fresh basil just before serving.
