Prepare the Veal Chop
Season the veal chops with salt, black pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chops and sear each side for 3-4 minutes until browned.

Cook the Veal Chop
Reduce the heat to medium and continue cooking the veal chops for an additional 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes before serving.
Potatoes au Gratin

Prepare the Potatoes
Preheat the oven to 375°F (190°C). Peel and thinly slice the potatoes. In a mixing bowl, combine heavy cream, minced garlic, salt, black pepper, and nutmeg.

Layer the Potatoes
In a greased baking dish, layer half of the sliced potatoes, followed by half of the cream mixture and half of the Gruyère cheese. Repeat the layers, finishing with cheese on top.

Prepare the Cheese-Bath
In a small saucepan, combine Gruyère cheese and heavy cream over low heat. Stir until the cheese melts and the mixture is smooth. Serve this cheese-bath tableside to pour over the veal chop and potatoes.
