For the Calamari

Method

For the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Set up Breading Station

In a shallow bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

  3. 3

    Bread the Calamari

Dredge each calamari ring first in the flour mixture, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Set aside on a plate.

  4. 4

    Heat the Oil

In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Calamari

Carefully add the breaded calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

For the Spicy Aioli

  1. 6

    Prepare the Aioli

In a small bowl, combine the mayonnaise, minced garlic cloves, lemon juice, Sriracha sauce, salt, and pepper. Mix well until smooth.

  2. 7

    Serve

Transfer the spicy aioli to a serving bowl and serve alongside the crispy calamari.
