Add Wine and Broth
Pour in the white wine and cook, stirring frequently, until the liquid is mostly absorbed. Gradually add the chicken or vegetable broth, one cup at a time, stirring continuously until each cup is absorbed before adding the next, about 20 minutes total.

Finish the Risotto
Once the rice is creamy and al dente, remove from heat. Stir in the grated Parmesan cheese, salt, and black pepper. Let the risotto cool completely.
Forming the Arancini

Prepare the Filling
Once the risotto has cooled, take about 2 tablespoons of risotto in your hand and flatten it. Place a cube of mozzarella in the center and mold the rice around it, shaping it into a ball. Repeat until all the risotto is used.

Coat the Balls
Roll each arancini ball in the beaten egg and then coat with breadcrumbs until fully covered. Set aside.

Fry the Arancini
Carefully add a few arancini balls at a time to the hot oil. Fry until golden brown, about 3-4 minutes per side. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.
