    Cut the smoked pork belly into small cubes and cook them in a skillet over medium heat until crispy. Remove from heat and let cool.

    Boil the Eggs

    In a pot, bring water to a boil. Gently add the eggs and boil for 6-7 minutes for soft-boiled or 10-12 minutes for hard-boiled. Transfer them to an ice bath to cool down, then peel the eggs.

    Prepare the Coating

    In three separate bowls, set up a breading station: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs mixed with chopped parsley, salt, and pepper.

    Assemble the Scotch Eggs

    Take a peeled egg and wrap it with a layer of cooked smoked pork belly. Roll it in flour, dip in the beaten egg, and then coat it in the breadcrumb mixture.

    In a deep pot, heat cooking oil to 350°F (175°C). Carefully add the coated eggs and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
