Add Remaining Vegetables
Stir in the chopped tomatoes, corn, zucchini, and mushrooms. Season with salt and black pepper. Cook for another 5-7 minutes until all the vegetables are tender.

Assemble the Quesadilla
On a clean surface, lay one flour tortilla. Spread half of the sautéed vegetable mixture over one half of the tortilla. Sprinkle half of the shredded cheese on top. Fold the tortilla in half to cover the filling.

Cook the Quesadilla
In the same skillet, place the folded quesadilla over medium heat. Cook for 3-4 minutes on each side until golden brown and the cheese has melted.

Serve
Remove from the skillet, cut into wedges, and serve hot with guacamole and sour cream on the side.
