Prepare the Meat
Choose either asada or carnitas for your tacos. If using asada, heat olive oil in a skillet over medium-high heat. Season the diced beef with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5-7 minutes. For carnitas, simply heat the pulled pork in a separate skillet until warmed through.

Warm the Tortillas
While the meat is cooking, warm the corn tortillas. You can do this in a dry skillet over low heat for about 30 seconds on each side, or you can wrap them in aluminum foil and place in an oven at 350°F (175°C) for about 10 minutes.

Assemble the Tacos
Once the meat is cooked and the tortillas are warm, begin assembling your tacos. Place a portion of the cooked asada or carnitas onto a tortilla, then top with pico de gallo. Squeeze some fresh lime juice over the top.

Serve
Serve the tacos immediately with extra lime wedges on the side for squeezing.
