Prepare the Shrimp
In a large pot, bring the water to a boil. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Remove from heat, drain, and let cool. Once cooled, chop the shrimp into bite-sized pieces.

Make the Pico de Gallo
In a mixing bowl, combine diced tomatoes, red onion, cilantro, jalapeño, lime juice, salt, and black pepper. Mix well and let it sit for about 10 minutes for the flavors to meld.

Assemble the Cocktail
In a large serving bowl, combine the chopped shrimp with the pico de gallo. Gently fold in the diced avocado and olive oil. Adjust seasoning with additional salt and pepper if necessary.

Serve
Chill the shrimp cocktail in the refrigerator for at least 30 minutes before serving. Serve with lime wedges on the side.
