    Prepare the Filling

    In a skillet over medium heat, cook the ground beef until browned. If using chicken, ensure it is heated through. Drain excess fat if necessary. Add diced onion and cook until translucent. Season with salt and pepper to taste.

    Assemble the Tortillas

    Lay a flour tortilla flat and add a portion of the beef or chicken filling in the center. Sprinkle with a generous amount of shredded cheese. Roll the tortilla tightly, folding in the sides to secure the filling.

    Fry the Tortillas

    Heat oil in a deep pan over medium-high heat. Once hot, carefully place the rolled tortillas in the oil, seam side down. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve

    Top the fried tortillas with additional shredded cheese, diced tomatoes, and onions. Serve alongside guacamole and sour cream.
