Cook the Meat
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the chicken or beef with fajita seasoning, salt, and black pepper. Cook until browned and cooked through, about 6-8 minutes. Remove from skillet and let rest before slicing.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Sauté the sliced onion and bell peppers until they are soft and caramelized, about 5-7 minutes.

Assemble the Quesadilla
On half of each tortilla, layer the cooked meat, sautéed onions, bell peppers, and shredded cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Wipe the skillet clean and heat over medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden brown and the cheese is melted.

Cut each quesadilla into wedges and serve with your favorite dips like salsa, guacamole, or sour cream.
