Preparation

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add the cooked shredded beef or chicken and season with salt and pepper to taste. Cook until heated through, then remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a corn tortilla, place a portion of the meat filling in the center, and roll it up. Place the rolled tortilla seam-side down in a baking dish. Repeat until all tortillas are filled.

    Add Salsa Verde

    Pour the salsa verde evenly over the rolled enchiladas in the baking dish. Sprinkle crumbled Cotija cheese on top.

    Bake

    Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is slightly golden.

    Prepare the Sides

    While the enchiladas are baking, prepare the sides by slicing the avocado and dicing the onion.

    Serve

    Remove the enchiladas from the oven, let cool for a few minutes. Serve hot with sliced avocado, diced onion, a dollop of sour cream, and a side of rice and beans.
