Prepare the Filling
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.

Add the ground beef to the skillet, breaking it apart with a spatula. Season with ground cumin, salt, and black pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.

Assemble the Enchiladas
Preheat your oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.

Take a corn tortilla, add a few spoonfuls of the beef mixture and a sprinkle of shredded cheese, then roll it up tightly and place it seam-side down in the baking dish.

Repeat with the remaining tortillas and filling until the dish is full.

Top with Sauce and Cheese
Pour the remaining enchilada sauce over the rolled enchiladas, making sure to cover them evenly. Sprinkle the remaining shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Remove from the oven, let cool for a few minutes, and garnish with chopped cilantro if desired. Serve warm.
