    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for an additional minute.

    Cook the Meat

    Add ground beef or shredded chicken to the skillet, breaking it up with a spatula. Season with cumin, chili powder, salt, and pepper. Cook until the meat is fully browned (if using beef) or heated through (if using chicken).

    Assemble the Enchiladas

    Preheat the oven to 375°F (190°C). Spread a thin layer of enchilada sauce on the bottom of a baking dish. Place about 1/4 cup of the meat mixture and a sprinkle of cheese on each tortilla, roll them up, and place seam-side down in the baking dish.

    Add Sauce and Cheese

    Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
