Ceviche (marinated Fish) Recipe
A classic dish from the coast of old Mexico. We carefully marinate halibut in freshly squeezed citrus juices then mix them with onion, tomatoe, cilantro, avocado slices and chiles.

Marinate the Fish
Pour the lime and lemon juice over the halibut pieces, ensuring they are fully submerged. Cover and refrigerate for about 2 hours, or until the fish is opaque and has 'cooked' through the citrus juices.

Mix in Vegetables
After marinating, drain off some of the citrus juice, leaving just enough to keep the fish moist. Add diced red onion, diced tomato, chopped cilantro, sliced avocado, and chopped chiles. Gently mix until well combined.

Season
Season the ceviche with salt and black pepper to taste. Adjust seasoning as needed.

Serve
Serve the ceviche immediately, garnished with extra cilantro and lime wedges if desired.
