Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, cooking until softened, about 5 minutes. Add the chicken or beef, and sprinkle with fajita seasoning. Cook until the meat is fully cooked, about 7-10 minutes. Remove from heat and let cool slightly.

Assemble the Enchiladas
Preheat your oven to 350°F (175°C). Take a tortilla and fill it with the chicken or beef mixture, then sprinkle with a little shredded cheese. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Pour enchilada sauce evenly over the top of the rolled tortillas. Sprinkle the remaining shredded cheese over the sauce.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool for a few minutes. Drizzle sour cream on top and garnish with fresh cilantro before serving.
