Preparing Enchiladas

Cook the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

Mix in Cheese
Remove the skillet from heat and mix in 1 cup of cheddar cheese until melted and well combined.

Prepare Tortillas
Preheat the oven to 375°F (190°C). Warm the corn tortillas in a skillet or microwave until soft.

Assemble Enchiladas
Place a generous amount of the beef and cheese mixture in the center of each tortilla. Roll them up and place seam-side down in a baking dish.

Top with Cheese
Sprinkle the remaining cheddar cheese over the top of the enchiladas.

Bake
Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
