In a skillet over medium heat, add olive oil. Once hot, add the diced onion and minced garlic. Sauté until the onion is translucent. Add the ground beef and cook until browned. Drain excess fat, then stir in the taco seasoning and follow package instructions, adding water if necessary.

Assemble Enchiladas
Preheat your oven to 350°F (175°C). In a 9x13 inch baking dish, spread a thin layer of refried beans on the bottom. Take a tortilla, fill it with a portion of the beef mixture and sprinkle some shredded cheddar cheese. Roll it up and place it seam-side down in the baking dish. Repeat with remaining tortillas.

Once all enchiladas are assembled, sprinkle the remaining cheddar cheese on top. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and slightly golden.
