Once the peppers are peeled, make a slit on one side and remove the seeds. Fill each pepper with shredded cheese, then gently close them.

Batter and Fry the Peppers
In a bowl, beat the eggs until fluffy. In another bowl, place the flour. Dip each stuffed pepper first in the flour, then in the egg mixture. Heat vegetable oil in a frying pan over medium heat and fry the peppers until golden brown on all sides. Drain on paper towels.
