    In a bowl, mix the shredded chicken or beef with salt, pepper, and half of the ranchero salsa. Set aside.

    Heat the Tortillas

    In a skillet, heat olive oil over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until pliable.

    Assemble the Enchiladas

    Place a portion of the filling on each tortilla, roll them up, and place them seam-side down in a baking dish.

    Top with Salsa and Cheese

    Pour the remaining ranchero salsa over the rolled enchiladas, then sprinkle with crumbled Cotija cheese.

    Preheat the oven to 350°F (175°C) and bake the enchiladas for 15-20 minutes until heated through and the cheese is slightly melted.
