Prepare the Filling
In a bowl, mix the shredded chicken or beef with salt, pepper, and half of the ranchero salsa. Set aside.

Assemble the Enchiladas
Place a portion of the filling on each tortilla, roll them up, and place them seam-side down in a baking dish.

Top with Salsa and Cheese
Pour the remaining ranchero salsa over the rolled enchiladas, then sprinkle with crumbled Cotija cheese.

Bake
Preheat the oven to 350°F (175°C) and bake the enchiladas for 15-20 minutes until heated through and the cheese is slightly melted.

Garnish and Serve
Remove from the oven, garnish with chopped cilantro, and serve hot.
