    Prepare the Beef Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened. Add ground beef, cumin, salt, and pepper. Cook until the beef is browned and cooked through. Drain excess fat and set aside.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). In a baking dish, spread 1 cup of enchilada sauce on the bottom. Take a corn tortilla, add a generous amount of the beef filling and a sprinkle of cheddar cheese, roll it up, and place seam-side down in the dish. Repeat until all tortillas are filled.

    Add Sauce and Cheese

    Pour remaining enchilada sauce over the rolled tortillas. Sprinkle the rest of the cheddar cheese on top.

    Bake

    Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Let cool for a few minutes before serving. Garnish with sour cream and fresh cilantro.
