Method
Preparation

- 2
Melt the Chocolate and Butter
In a microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Allow to cool slightly.
- 3
Whisk Eggs and Sugar
In a separate mixing bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.
- 4
Combine Mixtures
Stir the melted chocolate mixture into the egg mixture gently until well combined. Add the vanilla extract and a pinch of salt, mixing well.
- 5
Add Flour
Sift the all-purpose flour into the mixture and fold gently until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.
- 8
Cool and Serve
Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges of each ramekin, then invert onto plates. Serve immediately, preferably with vanilla ice cream or whipped cream.
