    Prepare Ingredients

    Chop the garlic, slice the Chinese sausages, and slice scallions. Set aside.

    Scramble Eggs

    In a large skillet or wok, heat a bit of oil over medium heat. Beat the eggs and pour them in. Scramble until just cooked, then remove from the pan and set aside.

    Cook Sausages and Garlic

    In the same pan, add more oil if needed. Add garlic and cook until fragrant. Add sliced Chinese sausages and cook until heated through.

    Fry the Rice

    Add the cooked rice to the skillet, breaking up any clumps. Stir-fry for 5-7 minutes until heated through and slightly crispy.

    Combine Ingredients

    Add the scrambled eggs back to the pan along with crispy pork fat. Stir in soy sauce, sesame oil, black pepper, and salt to taste. Mix well.

    Add Fresh Herbs

    Finally, fold in the Thai basil and scallions. Cook for an additional minute until the herbs are wilted.
