Prepare the Ingredients

Peel and dice the potatoes into small cubes. Chop the yellow onion and scallions. Rinse the Thai basil leaves and set aside.

Sauté Onions

In a large pot, heat the vegetable oil over medium heat. Add the chopped yellow onion and sauté until translucent, about 5 minutes.

Add Curry Paste

Stir in the yellow curry paste and cook for an additional 2 minutes, allowing the flavors to meld.

Add Potatoes and Liquid

Add the diced potatoes, coconut milk, water, and salt. Stir well to combine.

Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes, or until the potatoes are tender.

Finish with Herbs

Once the potatoes are cooked, stir in the Thai basil and scallions. Cook for an additional 2-3 minutes.
