Prepare the Noodles
Cook the egg noodles according to package instructions until al dente. Drain and set aside.

Make the Peanut Sauce
In a small bowl, whisk together 1/2 cup of peanut butter, 1 tablespoon of soy sauce, 1 tablespoon of red curry paste, 2 tablespoons of lime juice, and 1/4 cup of warm water until smooth. Adjust the consistency with more water if needed.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of oil over medium heat. Add sliced red bell pepper and julienned carrots. Sauté for about 3-4 minutes until slightly softened. Stir in bean sprouts and cook for an additional minute.

Combine Everything
Add the cooked noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the top and toss everything together until well coated and heated through.

Serve
Plate the peanut noodles and top with chopped scallions, cilantro, and crushed peanuts. Enjoy!
