Prepare the Noodles
Soak the rice noodles in warm water for about 20-30 minutes or until they are soft. Drain and set aside.

Make the Sauce
In a bowl, mix together the tamarind paste, soy sauce, fish sauce, brown sugar, and lime juice. Set aside.

Cook the Eggs
In a large skillet or wok, heat a tablespoon of oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked. Remove from the skillet and set aside.

Stir-Fry
In the same skillet, add another tablespoon of oil. Add the scallions and stir-fry for about 1 minute. Add the soaked rice noodles and the prepared sauce. Stir-fry for 2-3 minutes until everything is well combined.

Add Bean Sprouts and Eggs
Add the bean sprouts and scrambled eggs to the skillet. Toss everything together and cook for another 1-2 minutes until heated through.

Serve
Transfer to serving plates and top with crushed peanuts. Serve immediately.
