    Prepare the Noodles

    Cook the wide rice noodles according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    Slice the yellow onion and scallions. Cut the Chinese broccoli into bite-sized pieces.

    Stir-Fry the Ingredients

    Heat the vegetable oil in a large pan or wok over medium-high heat. Add the sliced onion and stir-fry for 1-2 minutes until it begins to soften.

    Add Broccoli and Bean Sprouts

    Add the Chinese broccoli and bean sprouts to the pan. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

    Add Noodles and Sauces

    Add the drained rice noodles to the pan. Pour in the soy sauce, oyster sauce, and sprinkle in the sugar. Toss everything together to combine.

    Add Eggs

    Push the noodle mixture to one side of the pan. Crack the eggs into the empty side and scramble them until just set. Then mix with the noodles.

    Stir in the chopped scallions and season with salt to taste. Serve hot.
