Prepare the Mango Puree
Peel and chop the ripe mangoes, then blend them in a food processor until smooth. Measure out 2 cups of mango puree and set aside.

Bloom the Gelatin
In a small bowl, combine gelatin powder with 2 tablespoons of water. Let it sit for about 5 minutes to bloom.

Cook the Custard Base
In a saucepan, whisk together the egg yolks and sugar until smooth. Add the heavy cream, milk, and vanilla extract. Cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon.

Incorporate Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Then fold in the mango puree until well combined.

Chill the Mixture
Pour the custard into serving cups or molds and refrigerate for at least 4 hours or until set.

Serve
Once set, garnish each serving with fresh fruit like mango slices and mint leaves before serving.
