Prepare the Marinade
In a large mixing bowl, combine the finely chopped lemongrass, minced garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime juice, vegetable oil, salt, and black pepper. Mix well until the sugar is dissolved.

Marinate the Chicken
Cut the chicken breast into bite-sized cubes and add them to the marinade. Toss the chicken in the marinade until well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Skewers
Preheat the grill or grill pan over medium-high heat. Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.

Remove the skewers from the grill and let them rest for a few minutes. Serve warm with your favorite dipping sauce or fresh vegetables.
