Finely chop the yellow onion, shallots, makrut lime leaves, and Thai chilies.

In a large mixing bowl, combine the ground pork, chopped yellow onion, shallots, makrut lime leaves, and Thai chilies. Mix thoroughly until all ingredients are evenly incorporated.

Take a portion of the mixture and shape it into small patties or links, depending on your preference.

Cook the Sausage
Preheat a grill or frying pan over medium heat. Cook the sausage patties or links for about 10-15 minutes, turning occasionally, until they are browned and cooked through.

Prepare Jeow Mak Len
For the dipping sauce, blend roasted tomatoes, garlic, and chilies together until smooth. Adjust seasoning to taste.
