Cook the Ground Chicken
In a large skillet over medium heat, add the ground chicken and cook, stirring frequently, until fully cooked and browned (about 5-7 minutes). Drain excess fat if necessary.

Prepare the Vegetables
While the chicken cooks, thinly slice the red onion, chop the cilantro, and scallions. Roughly chop the mint leaves.

Make the Vinaigrette
In a small bowl, mix together the lime juice (from about 2 limes), fish sauce (3 tablespoons), and a pinch of sugar. Stir well to combine.

Combine Ingredients
In a large bowl, combine the cooked ground chicken, sliced red onion, chopped cilantro, scallions, mint leaves, and toasted rice powder.

Dress the Laab
Pour the lime fish sauce vinaigrette over the chicken mixture and toss well to combine. Adjust seasoning with salt or more lime juice if desired.

Serve the Laab Gai warm or at room temperature, garnished with additional mint and cilantro if desired.
