1. Prepare the chicken
In a large pot, add the chicken thighs and cover with chicken broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the chicken is cooked through. Remove the chicken, let it cool slightly, and shred it.
2. Make the curry broth
In the same pot, add the red curry paste and cook for 2-3 minutes until fragrant. Then, add the coconut milk and bring to a gentle simmer. Stir in the fish sauce and lime juice.
3. Cook the noodles
In another pot, bring water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
4. Combine everything
Add the shredded chicken back into the pot with the coconut curry broth. Stir to combine and let simmer for an additional 5 minutes.
5. Serve
To serve, place a portion of rice noodles in each bowl, ladle the coconut curry broth over the noodles, and top with shredded cabbage slaw, chopped cilantro, green onions, and chili flakes as desired.
