Wash the tomatoes thoroughly and chop them into quarters. Peel and slice the garlic and shallots, and prepare the red chili peppers by removing the stems.

In a pan over medium heat, add the chopped tomatoes. Allow them to roast for about 10-15 minutes until they become soft and slightly charred.

Transfer the roasted tomatoes to a blender. Add garlic, shallots, red chili peppers, lime juice, fish sauce, and salt. Blend until smooth, adjusting seasoning to taste.
