Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the salt, black pepper, garlic powder, and onion powder into the meat, ensuring to get it into the scored areas.

Marinate
Let the pork belly marinate for at least 1 hour, or preferably overnight in the refrigerator for the best flavor.

Preheat Oven
Preheat your oven to 220°C (428°F).

Cook the Pork
Place the pork belly in a roasting pan. Pour the water into the pan around the pork, then drizzle olive oil over the skin. Roast in the oven for 30 minutes.

After 30 minutes, lower the oven temperature to 160°C (320°F) and continue roasting for another 1 hour, or until the skin is golden and crispy.
