Make the Cookie Dough
In a large mixing bowl, cream together the unsalted butter and powdered sugar until light and fluffy. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.

Shape the Cookies
Preheat the oven to 350°F (175°C). On a floured surface, roll out the dough to about 1/4 inch thick. Use a round cookie cutter to cut out cookies and place them on a lined baking sheet.

Bake the Cookies
Bake in the preheated oven for 10-12 minutes, or until the edges are slightly golden. Remove from the oven and let cool.

Assemble the Alfajores
Spread a generous layer of dulce de leche on the flat side of one cookie, then top with another cookie. Repeat with remaining cookies.

Dust the assembled alfajores with powdered sugar before serving.
